Since its inception, the internet has been bringing people together, making the world a much place than it used to be. Hope everyone had a great holiday! So hello 2009! Well we continue on, think about how we have changed or have we? Ok, there are two types of individuals, ones that like it, and the one’s that like it hot! Now it does not really mean that one in better than the other, it just means we are all different in our own ways. I have noticed when it comes to beef jerky there are two groups. On one side you have the Teriyaki group and mild flavored individuals or you have the other. The other group is who we will focus in this blog. How many times in my life too many to count, one side you have people asking for the hottest jerky on the earth. Maybe it’s a right of passage, maybe its calling you out? Are you man enough, sorry do not mean to be sexiest. Well the folks at Jedidiah’s Jerky out did themselves this time. So they take the hottest Chile the world has ever known the Habanero and added to a smoke piece of beef. Now just adding heat is only one step, you see the Habanero has no flavor, its just heat. So they added the Chipotle. The result a nicely flavored hot, and did I say hot, piece of fire my mouth has ever known! Take my word this is one hot mama! Now personally I was raised on great southwest cooking, and warm food is as part of the southwest as peanut butter and jelly, peas and carrots or apple pie and ice cream. Beef Jerkey is so darn tasty there ain’t no way to resist them tasty morsels of smoky tender goodness. I’m not certain on the spelling, but I surely know a good cut of Jerky when I see it smell it taste it yes I do. See, the trick is in the seasonings, the curing process plus the manner in which you slice the meat against the grain. Now I’ve tried these so called gourmet snack foods that has been on the market lately and believe you me I am not impressed. Filet mignon aint fit fer my Doberman far as I’m concerned so why take the time to jerk it? The whole concept is lost on me. I’ve been a fan of brisket since I can remember. Slow cook that hunk of juicy flesh all darn day with mesquite chips and the whole nine yards. You want to talk about eatin’?
I tend to get sidetracked talking about good eats so let me get back to the nitty gritty. Beef Jerkey is part of my heritage and history and the whole oral tradition of my family. Look through any photo album and no matter who’s in the picture, how young or old they may be and no matter what they might be doing you can bet your bottom dollar there is going to be some good old Beef Jerkey in there somewhere. If you don’t see a bag lying around anywhere then try looking close up at the smile and see if there aint a few morsels lodged in between the pearly whites. Seriously we love the stuff and nobody knows better than the good folks over that Jedidiah’s Jerky now they can learn you a thing or two jerkin’ your meat. I doubt they would give the secret recipe straight away but if you buy enough bags of this stuff and still cant quite reverse engineer the products I figure they might invite you down to the factory so you can witness the process for yourself.
