Jedidiah’s Honey Glazed Beef Jerky

Wow, sweet beef jerky! Who would have thought! Not sweet like candy but sweet like Honey. That’s Jedidiah’s Honey Glazed Premium Beef Jerky. Not only is it soft but honey sweet, just might be the next thing to paradise. Jedsjerky.com sells this tasty treat in a 3.50 ounce package, the right size in my mind for a mid-afternoon attack of the munchies! If you think about it, not only do you get protein but you also get a sugar boost from the sweet honey! Why, honey and not some other sweet? Well that is simple, honey is a natural sweetener and using some other commercial additive would not be right. Now as you may or may not know, I have been in the jerky business since the mid 1980’s and honey flavored beef jerky was a favorite back in those days, so honey flavored beef jerky is not new. And since I am not aware that bee’s are making in new flavors lately we probably will not be seeing any newer flavors anytime soon. Do you know my favorite time to eat jerky? Well its no wonder that the freshest time to eat a beef snack is as close to the production date as possible, but also the room temperature has a lot to do with how soft and tender the snack is going to be. You see if the package is say 70 degrees as apposed to a package that has been in a refrigerator and say is about 40 degrees it just stands to reason that the package that is room temperature will be more pliable and chewer. However, its always best for food safety to keep your meat product, no matter what meat product as cold as possible.

Jerky to Iraq

Everyone likes a good night’s sleep. But in the early morning hours of Sunday morning Jerky Jed could not sleep. The phone rings, being so curious as to who was calling at such a time. The other person on the line says he Billy from Iraq, the back ground noise of a long distance connection was evident. Billy says he’s in the Army and would like to have some beef jerky because he wants something from the United States that reminds him of home.

Now I have traveled abroad, but never to anything too close to Iraq. My guess is that in any town in the Middle East, convience stores are not too common. Maybe we should export American Laundries to China, and C-stores to the Middle East? Anyway back to my story about Billy. Billy was a kind, younger sounding person serving our country with his friends. We salute Billy’s efforts here at Jed’s Jerky.com and appreciate his interest in Jerky and Gourmet Snacks. If we can provide some uniquely American flavors to our fighting men and women we are doing our job, because without them the world would be a different place, a darker place in my view. So thank you for all that have served and are now serving! And thank you for the families that have loved ones that are serving! We hope Billy the best and a safe return home and all who serve with Billy! Perhaps we can get a blog entry from Billy soon, we will be sure to post for all, because we should never forget and always appreciate the folks in the United States Armed forces. You might ask yourself, what is brisket beef jerky and how is it different from regular jerky. That’s a good question. Lets break it down, first depends on the company and the style would be my first answer. So in very general terms most beef jerky is made of muscle. Why, well speaking from my position and my opinion cost is the primary point. Plus most generally speaking muscle has very little fat content. Now you have different grades of meat that the USDA has made for identify the different cuts.
Hence the difference between muscle and brisket of beef. Now you might know that Jedidiah’s Jerky makes a wonderful brisket of beef, beef jerky. They call it the Private Reserve, it comes in 4 flavors. Original, Teriyaki, Sweet Spicy, and hot and Spicy. All made of brisket of beef. Different from muscle, brisket is a softer more tender cut of beef. So prepare yourself for a sweet tender jerky experience! Now just today, I tried a typical piece of Beef Jerky, and let me tell you this was one leather chewing experience. Most people trying the Private Reserve always remark about the soft, tenderness of the brisket. But on the other hand, a tender, moist jerky is what you crave well look no further!

Since its inception, the internet has been bringing people together, making the world a much place than it used to be. Hope everyone had a great holiday! So hello 2009! Well we continue on, think about how we have changed or have we? Ok, there are two types of individuals, ones that like it, and the one’s that like it hot! Now it does not really mean that one in better than the other, it just means we are all different in our own ways. I have noticed when it comes to beef jerky there are two groups. On one side you have the Teriyaki group and mild flavored individuals or you have the other. The other group is who we will focus in this blog. How many times in my life too many to count, one side you have people asking for the hottest jerky on the earth. Maybe it’s a right of passage, maybe its calling you out? Are you man enough, sorry do not mean to be sexiest. Well the folks at Jedidiah’s Jerky out did themselves this time. So they take the hottest Chile the world has ever known the Habanero and added to a smoke piece of beef. Now just adding heat is only one step, you see the Habanero has no flavor, its just heat. So they added the Chipotle. The result a nicely flavored hot, and did I say hot, piece of fire my mouth has ever known! Take my word this is one hot mama! Now personally I was raised on great southwest cooking, and warm food is as part of the southwest as peanut butter and jelly, peas and carrots or apple pie and ice cream. Beef Jerkey is so darn tasty there ain’t no way to resist them tasty morsels of smoky tender goodness. I’m not certain on the spelling, but I surely know a good cut of Jerky when I see it smell it taste it yes I do. See, the trick is in the seasonings, the curing process plus the manner in which you slice the meat against the grain. Now I’ve tried these so called gourmet snack foods that has been on the market lately and believe you me I am not impressed. Filet mignon aint fit fer my Doberman far as I’m concerned so why take the time to jerk it? The whole concept is lost on me. I’ve been a fan of brisket since I can remember. Slow cook that hunk of juicy flesh all darn day with mesquite chips and the whole nine yards. You want to talk about eatin’?
I tend to get sidetracked talking about good eats so let me get back to the nitty gritty. Beef Jerkey is part of my heritage and history and the whole oral tradition of my family. Look through any photo album and no matter who’s in the picture, how young or old they may be and no matter what they might be doing you can bet your bottom dollar there is going to be some good old Beef Jerkey in there somewhere. If you don’t see a bag lying around anywhere then try looking close up at the smile and see if there aint a few morsels lodged in between the pearly whites. Seriously we love the stuff and nobody knows better than the good folks over that Jedidiah’s Jerky now they can learn you a thing or two jerkin’ your meat. I doubt they would give the secret recipe straight away but if you buy enough bags of this stuff and still cant quite reverse engineer the products I figure they might invite you down to the factory so you can witness the process for yourself. Happy holidays to all!
Yes, it’s that time of year where gift giving, holiday cheer and goodwill towards all men. Always a nice time of year we would all agree. But if you are looking for that last minute gift why not something outside of the box? What about a subscription to Jed’s Jerky Club? Not a bad idea for the Jerky lover in your life. Let’s think about the practicality of a monthly allotment of beef jerky. It’s the gift that keeps on giving, different flavors, different types, who could ask for anything better? Ok, I am sounding like a commercial, please forgive. They give me this space to talk about almost anything, but we have to give the advertisers their due. Back to the holidays, since most of my adult life has been spent in Southern California, and the Southwest, needless to say seasons changing was not a big part in my life. However, I do remember a snow filled weekend during a family get together in Big Bear Lake, California, and will never forget! One of my first times driving in the snow, well let me tell you it was not pretty. What do you expect for a flatlander. So the idea of seasons changing was not real big in my life growing up, but at times it seems I have missed something growing up, the idea of a nice fire, and snow piling up outside seems like a dream, or nightmare, I guess it depends your point of view. But also enjoying a nice piece of beef jerky seem like a nice addition, yeah it really does not go with the fire place, snow picture that was just painted. Well it’s my dream anyway, maybe somebody out there could give their story of growing up in the Midwest or Northwest, it would be interesting to hear a different point of view. Sounds kind of funny? Well it’s a good question. How do you like your Beef Jerky. The reason that particular question is because I believe there is a big division among jerky fans. I have spoken to die hard fans of Jerky and they attest to the traditional “way it was” argument. And sometimes a dry, flavored, usually black peppered is just what the mood calls for, and you need to satisfy that urge! That is why at Jed’s Jerky .com makes a wonderful Premium Black peppered jerky. However, it’s soft and not a piece of shoe leather. If you are looking for shoe leather, perhaps trying my old boots, give me your address at let me send you a pair. But I must confess that the argument is a valid one. Why fight traditional beef jerky values, not from the beef jerky dude, that’s for sure. But my favorite must be wet or soft beef jerky. It’s just more pleasant eating experience! This is un- official but my belief though my years of asking jerky fans is about 8 out of 1 in favor of soft, tender or moist beef jerky. Perhaps one of these days we will set up a booth and challenge that very question, what do you think? Besides not ripping out a set of teeth, dry beef jerky just seems to get stuck in my teeth a lot more. And although understanding the tenderizing of the meat by having it soak in the natural juices of your mouth is something natural, or so I guess. As long as it’s marinated correctly or seasoned would be best. So really after reading my own article I could go either way on this debate.

Let’s have some background first. What is Slap Beef Jerky? There are many types of Beef Jerky, you have Natural style, as my earlier blog entry. You have Chopped and Formed. You have hung beef jerky. You have flavored beef jerky. The list is endless! But in the last 10 years or so, we have a new style that has entered the market place. But is it a new style? Is it made from something other than Beef? No, it’s made of beef, but it could be made of any large game for that matter. But for all of the commercial types, beef is king. Just today I was speaking to a manufacture of Slap beef jerky. The topic we spoke of was wrapped or unwrapped when it came to slap beef jerky. And also in one of my earlier blogs that very question is asked. If you recall it really comes down to product appeal or health concerns. Who wants to eat a piece of beef jerky that somebody else handled? Yuck! Sorry, went too far from my topic. Answering the question what is slap beef jerky well, basically it’s a very thinly sliced piece of beef jerky. So thin is the cut that in many cases you can see right through it! But to the naked eye it’s a really big piece of Jerky! Even something as little as 1.5 oz looks like a sheet of paper. However, looking at the ounce size serving, perhaps the actual size might not be a bargain, or maybe it is, it’s a personal choice. The old saying if it looks good eat it applies here! I personally like this type of Jerky, usually you need to soak it down in your mouth and start to make the meat softer as you chew. And of course all of the great flavors are available on the Slabs! So if you get the chance try slab beef jerky, chances are, you will like it!
