Well this is the first for us at Jed’s Jerky & Gourmet Snacks! In this month’s Maxim Magazine under the title Jerky Boys written by Molly Young, Jedidiah’s Private Reserve Sweet & Spicy Brisket made not only 5 out of 5 rating, but we also got the Maxim’s Favorite out of all of the 9 rated beef jerky and other meat snacks companies. This story also featured top chief’s that also tasted the jerky and gave their thoughts. Not only are we happy to be recognized by such a popular magazine, but also the national and worldwide distribution of this magazine!

So needless to say, things have been quite busy around Jed’s Jerky distribution and processing plant. If fact we have been so busy old Jerky Jed has been over worked to the point that even the time to write this article was on borrowed time! Again we take this to be a great honor and we feel proud of this award. We feel that many years of hard work has paid off, because we wanted to make beef jerky that stood out from our competitors and make a name in honor of the beef jerky fans worldwide! Not to mention the 30 day BJ Diet that Jen is doing, this has been a wonderful exposure to the social media. Jen does a wonderful job in expressing herself and her youtube video is out of this world! Please check it out! So things are moving fast and we are happy with the results, we are working on new ideas so please be on the lookout for new and exciting new flavors that hopefully will continue success we have enjoyed. So on the horizon we hope to have a new lower price jerky page for people who love jerky!

It’s that time, time to change those clocks!  Spring forward, or fall back, the only way to remember what you are suppose to do.  So what does spring time and changing your clocks have to do with Beef jerky?  Good question, well spring time and summer time is the best time for taking trips, camping trips, hiking trips, fishing trips, etc.

And what you ask is the best snack for these excursions?  Yes, you guessed, jerky!  Think about it, what is always ready to eat, and always hits the spot, Jed’s Premium Black Peppered beef jerky.  Now that just happens to be one of my top favorites, but with so many to choose from you need to bring and plenty just in case you might have friends or extra family that might just want to sample you delights.  But let’s say you are headed to your vacation destination and something goes wrong, say a flat tire, or a road closed, well that could be a problem with many other foods, but not jerky, it’s ready when you are, so make sure you buy enough just in case.  So we know that we have a food product that is easy to store, easy to eat, and taste so good.

The next problem is trying to decide what flavors and how much too bring.  My suggestion, you can never have too much.  With as many natural disasters lately, it might be a good idea to have extra with the other emergency supplies, water especially!

Besides being a good source of protein, did I mention it taste good?  Perhaps you can think like this, going to the beach, Jedidiah’s Private Reserve Brisket of Beef Teriyaki flavor.  Going to the mountains, Jedidiah’s Beef Smokies.

Jerky for the Holidays: Buffalo Jerky, Turkey Jerky, Elk Jerky, Beef Jerky

cherry-maple-turkey-smallQuestion, what do all of these items have in common with the holidays?  Answer, I have not a clue!  Now I personally have given many gifts that were one of the above, after all is not the spirit of giving the most important point?  My point being is if you have not checked the website lately, you might be impressed to note we have a new tap, and the tap is labeled Elk, Venison and Buffalo.  Now you click on the tap and you will be taken to where we have added our latest items.

The company is called Remington, yes Remington the same company that makes ammunition for years.  What a famous name and boy what a fantastic product they make, we are proud to carry their items!  If you were ever interested or curious of these flavors now is the time to check it out, nobody makes a better product when it comes to Elk jerky, Buffalo Jerky and Venison Jerky.  So if you have that hard to buy for person on your list, and say they are a hunter or outdoor enthusiast that likes meat snacks, you might consider one or all of these jerky products.  Another flavor worth mentioning is the Cherry Maple smoked turkey!  Wow, was a rush of flavors and did I mention soft?  Truly a wonderful mixture of flavors to make the Turkey Jerky!  One other flavor we need to bring your attention is the Hot Beef Jerky in the Remington line up, wow did I say HOT!!!  Never in my past did a jerky bite back!  This product is so hot, that after about 15 seconds the fire inferno begins, and continues.  Make sure you have milk standing by, just in case!  Enjoy the holidays!

Every year I, “Jerky Jed” personally get out and mingle with the Oktoberfest crowd, a fun group that knows how to party! Of course we sample the best beef jerky, Jed’s Beef Jerky of course! As every show we offer free samples, usually 3 or 4 different flavors. It’s always interesting to see what trends and styles and peoples taste. This year my belief is it’s going to be a warm winter and hot summer! Amazing most people are asking for the hot stuff, and the hotter the better! Now this is not a scientific study, just my personal observation. Now that does not mean the Teriyaki group is not large and impressive, but this year we have handed out more samples and sold more Jedidiah’s Private Reserve Hot and Spicy Teriyaki than any other previous show.

Perhaps the location makes a big difference, we were in the southern California area. And just maybe people in general are getting to like the spicier side of life, and like my title said, “some people like it Hot”. What will it be next year, will this trend continue? Only time will tell, but in the mean time we will keep producing spicy jerky for the hot and spicy group, and endeavor to make even hotter flavors to see how hot is hot. Perhaps we will develop beef jerky so hot it’s on fire right out of the package, like banana fosters made table side or maybe cherries jubilee. Let me check with the fire marshal first! Until next time we will just have to see how far we can push the boundary of spicy to who knows? Maybe someday jerky will come with warning labels, warning people of the heat content and the need for moderation, but it might be fun to watch!

Jerky on Vacation

Like most people, August is a wonderful month to go on vacation with the family. Usually the last week in August because it is right before school starts. And living in the desert, a welcome reprieve of the dog days of summer. As do most families, we love camping. Not to mention hiking, fishing, boating and horseback riding. Picture in your mind a beautiful campsite, near a clear and pristine creek with the sounds of aspen leaves and the smell of pine. Did I mention fishing; yes fishing in a creek like this is just my idea of heaven.

And this is where my story begins; it was just as I said a beautiful vacation was just starting. Now as many streams today, the fish are introduced from usually a fish farm where they are raised to a predetermined age and released into the stream by the officials from fish and game department. And dates and times are never given so they give everyone a chance to catch a fish. So this particular day the stocking truck that delivers the rainbow trout happened to show up that day. Very happy to see such a sight, both adults and children alike. So the two gentlemen from fish and game do their jobs by taking 3 big nets filled with teaming rainbow trout waiting to swim in their new home. Now it was just my nature to be kind to people that are doing a particular job or deed to ask if they would like a fresh bag of Jerky. Now mind you, this was not a bribe, they had already did their job nor was I asking for any special request. As they tried Jed’s Famous Beef Jerky they were impressed by the taste and remarked favorable on the texture and flavor, they were pleased.

After a brief discussion about jerky the one fellow went back to the truck and out of a different tank brought forth a net full of extremely large trout usually only reserved for the lakes of the area. He took the net and put the fish into the stream, and proceeded to take one more net full and do the same. They soon left and we thanked them for their efforts. Soon, it was time to go fishin! Now as a father most of my time spent fishing is setting up rigs and baiting hooks, and perhaps setting a hook into a waiting trout. So time had begun, and suddenly a large tug came from the pole, as it was apparent that the hook was set the pole was handed to my nearest son, in this case it was Sean. To see the look and expression on his face was priceless.

The memory of Sean pulling up the largest trout I have ever seen in my many years of fishing was something I will personally never forget! As did Sean, from that moment on, Sean is the number one fishing person in our family. Always the first one to get his fishing pole in the water, the first to try any new form of fish to eat, yes that moment was big for both of us. The only problem is what if I had given the pole to my other son, would fishing be as big in his life. One of life’s ironies perhaps.

How to Eat your Jerky

Knowing how to eat jerky may seem like an oxymoron, since afterall jerky is a snack food, and snack foods are meant to pop into your mouth like a conveyor belt as your mind is focusing on something else, be it a television show, or driving a car, or typing on a computer.

But when you have a package of really good jerky, something you paid a premium for, should you woof it down like a German Shepherd, or should you appreciate each bite like the Queen of England?

It’s good to start off with a clean palate. When I evaluate a new brand or flavor of jerky, I like to take a swig of lemon water. I’ll get a bottle of water, squirt some lemon juice into it (you can buy juice from the store in those yellow plastic lemon bottles). The lemon seems to help clean up palate a little. You can also use a dry red wine too.

Take a bite sized piece, but don’t chew it. First suck on it and try to identify the very first flavor. Often times it’ll be a sweet flavor. You might notice some other seasonings. Some jerky have very little surface flavor, while others have tons. If you were to chew right away, the surface flavors will mix into the chewing flavor, and you won’t know what flavor came from where.

Good jerky should have a good deal of surface flavor. If a jerky beckons you to enjoy its surface flavors first, you’ll have a jerky that you can enjoy one piece at a time, and appreciate for its complexity. It also helps to suck on a piece for first for 15 seconds or more just to soften it and make chewing easier. Thus, it helps to have a good deal of surface flavor.

Once you’ve sucked on a piece for about 15 seconds, go ahead and start chewing. Notice any change in flavor? Usually, the flavors inside the meat are different than what you tasted on the surface. By sucking on the surface flavors first for 15 seconds you’ve established something to compare the chewing flavors with.

In the middle of chewing, pause for a moment to suck out some of the juices and try to identify what you in there. Usually you’ll taste the salt, and some faint traces of garlic or onion, and the natural meat flavors.

Now while chewing down on the jerky, notice what flavors leach out as your teeth compresses the meat. This is the marinade. A lot of jerky brands use soy sauce, others use worcestershire, some use vinegar, and others just salt.

When I start chewing on a piece of jerky, I try to find the natural meat flavors. Sometimes the natural meat flavors are so strong it’s pretty obvious. But other times they are so faint, I have to do a taste comparison between the surface and the chewing in order to find them. Some brands of jerky simply offer no natural meat flavors.

Note that as you continue chewing a piece of jerky, some flavors will wear off. The sweet is often the first flavor to wear off. By the time you get to latter part of chewing, just before you’re ready to swallow, the saltiness is often all that remains. In fact, with jerky marinated in soy sauce, the soy sauce tends to become more defined in the latter part of chewing, and that’s only because the other flavors wore off.

Some flavors tends to build up intensity after eating several pieces. Garlic, salt, black pepper, and chile peppers are known to do this. Often times a jerky is labeled as a “Black Pepper” variety, but doesn’t really offer much black pepper flavor initially. However, after eating several pieces, you’ll notice a moderate to strong black pepper aftertaste.

It also helps to pause after eating several pieces, just to let the aftertaste wear off. Take another drink of water, and set the bag of jerky down, and let five to ten minutes pass by. Now, eat another piece. You’ll notice more flavors show up on your palate once the aftertastes have worn off. High amounts of salt or black pepper will actually numb the tongue to where you can’t taste much of anything else.

Also take note of the chewing texture. Good jerky should feel like a piece of real meat, albeit dry. But once you have a piece chewed down to a soft mass, it should chew and feel like a piece of steak, ranging anywhere from medium to well done. Often times the mass-market brands of jerky will feel crumbly, while others will feel gummy, like eating a piece of “fruit roll-up”. Some brands incorporate certain ingredients designed to make jerky very soft, and as a result makes the chewing texture feel mushy.

Finally, as you’ve gone through most of the bag decide if you feel as if you have to have more. Jerky is a snack food, and snack foods should satisfy your craving to eat. It’s similar to potato chips, where once you eat one you can’t help but to eat more. If you don’t feel inspired to keep reaching for another piece of jerky, it means that jerky didn’t really fulfill that urge.

Where Does Expired Jerky Go?

Today I was looking at various jerky packages at a store shelf in my local grocery store. I noticed some packages on the lowest shelf and rummaged through them. There were a couple of packages of Hickory Farms brand jerky.

I looked at the expiration date, something I do everytime I buy jerky at the store. It had expired in January 2009. And this was August 2009!

The grocery store didn’t discount the price, or move the product to a clearance rack.

So what happens when grocery stores find themselves with expired bags of jerky? Do they just continue selling it?

The answer seems to be that some stores continue selling it. Jerky is one of those things that few people check the expiration date on. At the other end of the spectrum, folks always check the expiration date on dairy products. That’s because we’ve been trained to know that dairy products have a short shelf-life. But jerky? Well, the whole point of jerky is that it can sit on the shelf and remain edible for a very long time, and that’s why consumers don’t typically consider the expiration date.

But other stores sell them off to brokers who in turn sell them to salvage grocers.

The Associated Press ran an article today about “salvage grocers“, these are grocery stores who buy up food products that can’t otherwise be sold in regular grocery stores. These could expired products, damaged products, or products that had been opened…

Buffalo ribs that can be as expensive as $9 per pound at a traditional supermarket, sell for $2.99 a pound at the Friday Store. Deals like these come around when wholesalers order more than they can sell through traditional channels. But the food is always edible, Palumbo said.

Barbecue sauces, beef jerky, fruit drinks and chips can be purchased for 75 percent less than at mainstream stores.

If you’re talking about Oberto jerky, or Jack Link’s jerky, or whatever is cheap and convenient, perhaps saving 75% off the regular price is not a bad deal, if all you want is something to chew on.
